I started making my own ginger ale after one too many overly sweet versions left me feeling... meh. This one is bold, fresh, and totally customizable. With real ginger, brown sugar, a squeeze of lime, and bubbly water, it hits all the right notes—zingy, earthy, bright, and just the right amount of sweet.

How to Make Homemade Ginger Ale
This recipe makes a rich, spicy ginger syrup that becomes ginger ale when mixed with sparkling water and a squeeze of lime.

Ingredients

  • 1 lb fresh ginger root, peeled and roughly chopped

  • 1 cup brown sugar

  • 1 cup water

  • Sparkling water (to serve)

  • ½ lime, juiced

Instructions

  1. In a saucepan, combine chopped ginger, brown sugar, and water.

  2. Bring to a boil, then reduce heat and simmer uncovered for 30–40 minutes, until the mixture thickens slightly and smells amazing.

  3. Strain the syrup through a fine mesh sieve into a jar or bottle. Let it cool to room temperature, then refrigerate.

  4. To serve: Add 2–3 tablespoons of ginger syrup to a glass of cold sparkling water. Stir in fresh lime juice and ice. Adjust syrup to taste depending on how strong or sweet you like it.
